All you need to do is drag all of your music into the I-tunes application and it will track where they are and allow you to copy them to your ipod.

In the Itunes preferences you can choose to let Itunes organize the music for you - it will automatically sort according to band and album name.

Also in the preferences is the auto-syncronization feature, which automatically updates your Ipod according to changes in your music library. I always turn this off because I like to choose what music goes onto it, and it allows others to hook their Ipod up to my Itunes.

To put the music on your ipod is just drag and drop. Your Ipod shows up in the Itunes application on the left side of the screen, where your music playlists are.
