Simple answer: It's very rare for a human to be able to produce the sounds to speak Wookiee.

Not-so-simple "geeky" answer: In one of Brian Daley's Han Solo books (Han Solo at Stars' End), Han meets a human and is impressed when Chewbacca greets him and the human actually replies in Wookiee. The line in the book goes something like "Few enough humans could understand Wookiee. Fewer still had the range and force of voice necessary to speak it." Han is among the fortunate few who can understand Wookiee, but not among the fortunate fewer who can speak it.

Because that's the only way you can know what the hell Chewie's saying! Haven't you noticed that Han always repeats in English what Chewbacca says in Wookie? Something like: "Wait... are you saying that..." and then he says what the hairy guy said.

Because only a Wookie can speak that language. Can you imagine any human imitating a walrus believeably, which is the sound effect used for Chewbacca? No audiene member would take that actor or the film series seriously if they did. Chewbacca understands English though. Plus it cuts down on subtitles which people hate.

Two reasons; one, the human vocal apparatus can't make most of the sounds a wookie's can, and two, oftentimes when he was talking to Chewie he was around others who didn't speak wookie so he spoke standard out of courtesy.

coz he knows chewie also understands english, and he can't make the growls, coz only wookies can make those WIERD growls.

and also, do WE understand wookie?! i'm not sure about you, but i don't, so it wouldn't actually be a movie if we don't understand what they are saying to each other, would it?

Also, Han's vocal chords probably aren't capable of supporting the complex Wookie growls. (If you're looking for the nerdy answer)

Probably because he is trying to help Chewie learn how to speak english. He doesn't want to enable him to strictly speak his own language.
