and how do they show up full grown on the very first warm day of spring? Do they hybernate?

Many flies will over winter as adults, so that is why you see many flies on those first warm days. they go into a state known as diapause, it is much more complex that hibernation. Diapause involves complete metabolic and bodily shutdown, they basically stop "living" for the duration of these harsh conditions. There are also different types of flies that can over winter underground or in rotting logs as pupae over the winter, and some like mosquitoes for instance will over winter as eggs, either on land or in the water.
So basically there are many strategies to survive the winter and with over 150,000 different species of flies, their strategies are just as varied as the order itself.
