It depends somewhat on what era you are talking about. And you said Ireland, not Irish people. But generally;

intensely influenced by the Roman Catholic Church, (until the late 20th century).

very poor in the 19th & 20th centuries, (now it's one of the wealthiest countries in Europe).

large numbers of its people immigrating to America from about the 1840's to the 1920's.

currently has the highest native population growth in Europe, (it's the only one above zero).

still has lush green fields, giving it the name of "The Emerald Isle".

is the only free and independent nation of people of Celtic heritage, (Scottish, Welsh and Cornish people are still without one).

Oppression by England for about 800 years that most Irish and people of Irish ancestry, (I feel), now think is now over

and yes, well-known for the world's best whiskey and black beer

Ireland is a country that has gone from an agricultural economy to a services based.

We still have large areas of unspoiled countryside and due to our mild climate, have exceptionally green lands.

Politically we are very centrist edging to liberal in some areas and conservative in others.

In geopolitics we tend to bridge the gap between Europe and the US, somewhat more successfully than the UK.

The country has a massive diaspora, with large 1st/2nd/3rd generations in the UK, US, Canada, Australia, Argentina, France and Spain.

Society once dominatied by religion is now very informal and relaxed.

Ireland like other smaller nations in the EU tend to be peace makers with the larger countries.

Oh and Angela's Ashes is a load of crock and is despised by the people of Limerick as nowhere in the country has been like that for 30 years, but half the readers of the book seem to think it is.

Potatoes (about 10 per person per day!), potato famine of 1840, shamrock, St. Patrick, Bloody Sunday, language, beef (different taste from each region), 80% of Ireland is devoted to pasture and crops), 88% of population is Catholic, Celtic (no significant minorities exist), natural resources~ zinc, lead, natural gas, barite, copper, gypsum, limestone, dolomite, peat, silver , ... the longest place name in Ireland is Muckanaghederdauhaulia in County Galway.
