Stage 2 food is really not very different that the stage 1. Stage 2 containers are larger, the food is still fiarly well pureed. When the Stage 1's don't seem to be filling baby up anymore, then try the stage 2.

Pretty much the only differences between stage 1 and 2 foods are the size of the containers and the variety and thickness of the foods. You'll know your baby is ready when he/she is consistently finishing whole jars of stage 1 and still wanting more. For my daughter it was about 5 months, but I have a little boy in my daycare that has a much bigger appetite and pretty much skipped stage 1 altogether.

The children I take care of (all 7) Only stayed on baby food (stage 1) for about 2-3 months. After that I gave them table food . They were about 3 months when they started baby food in the jars. They ate the cereals around the age of 2 1/2 months. It all depends on the baby though.
Dont give her nothing with whole milk or peanuts if you plan to give her table food. Also , no honey .....

Stage two? I am not familiar with this stage system.
However, here are the guidelines - introduce solid food at 6 months, be sure there are enough iron rich items; meats, poultry, fish, tofu, beans, egg yokes.
6 months - puree changing to mash as baby learns to swallow
9 months - add minced, grated and finely chopped foods.
9 months - 1 year - add diced and cubed food (small finger food)
What types of foods?
6 mts - cereal, vegetables, fruit (and of course breast milk or formula)
7 - 12 months - meats, poultry, fish, tofu, beans, eggs (yokes only until after 1 year), cheese, yogurt
9 months - cows milk
To avoid in the first year: honey, candy/junk food, hot drinks, punches, kool-aid and Gatorade, salt, pickles, artificial sweeteners and reduced calorie foods.
