Gas cookers usually have a brass push up and twist connection at the back. When you disconnect this the gas is automatically shut off by a spring loaded valve, leaving you to do what you must. Put it back in the same way. Ive done it loads of times for people, and if your unsure when your finished phone for a gas check. (FREE)

The hob should have a push and twist bayonet fitting, you can disconnect and reconnect this yourself. You don't need to check anything else, the fittings are foolproof.
