A childs diet also effects their emotions and personality,if over fed a child may become lathargic,withdrawn etc.
Adults and other children in a childs life can also have an effect on their emotions and personality,no father figure,step brothers/sisters foster parents.
All these factors play a part in a childs emotions and personalities.
Read books by Chomsky,Piaget,Skinner all these therorists give great examples of child development and how and why children develop emotionally and physically including personality

the affection that they are being given. if a child is given too much attention and is extremely reliable on the parent, that child is going to depend on the parent when they are older. on the other hand, if the parent does not show the child attention then the child will be independent and cast away from others. the best thing to do is help the child out when they need it, but at the same time, ask the child how they would do something and why they believe it is right or why they chose to do something in a certain way. for example, if the child is coloring and drawing, look over their work and ask them why they chose to color things in a certain way, but do not tell them it is wrong. but if a child is doing a math problem, ask them why they did it that way and then explain to them how it is done the right way.

The most important influence is that of parenting. The child needs to be reassured that they are accepted and loved. They need to have positive role models who make wise choices and treat them with the same respect they expect.
