As someone who has worked in a zoo during the deaths of two elephants I can tell you how my particular zoo disposed of the bodies. One can only assume that each zoo has its own protocol, but in the case of an animal this size, I’m sure it’s very similar.
Most zoos use incinerators to dispose of carcasses, or the animal is sent away to be skinned (the pelts are used in zoos across the country for education), and the bones are cleaned and bleached. Elephants, on the other hand, have too much fat to be incinerated. In our situation the elephants were precisely dismembered during the necropsy. The different pieces of the animal were taken to various parts of the zoo and buried in unmarked graves so that nature can do its work on the bones (i.e. maggots and beetles). However, the tusks were sent away to avoid stupid people attempting to dig them up. It is my understanding that only a few people know the locations of all the graves.
I know you wanted gory, but these animal had a personality and many people were close the animals. These are like extended family members, and it would be considered rude to explain what exactly happened during the necropsy. However, rest assured, it was neither pleasant, nor something any of the keepers involved want to do again.

Sometimes they are donated for research. Other times the skulls or entire skeletons are prepared for display. There's a great place in Oklahoma that prepares the skeletons of zoo animals.
