Sounds like you've been to both but don't want to do the same things again.
I recommend my Florida clients to go to Key West. Visit all of the Islands there. I recommend my California clients to visit The Catalina Islands. This give you the opportunity to leave the country and not really leave the country. You wont even need a passport.

Florida is a better bet because your getting there before hurricane season and before all the real big crowds get there and theres less pollution and no earthquakes and its cheaper than trying to stay in california. if your looking for amusement park type fun theres disneyworld and universal studios in Orlando,Miami/Miami beach is a nice area as well lots of beachside resorts.you could also check out the everglades or go to the florida keys and go to margaritaville...
