thank you....looking for something different then turkey sasuage on a bun....i am oping to use the recipe for dinner tonight! thank you for sharing and for your time!! looking forward to reading your ideas!

TURKEY SAUSAGE AND VEGETABLE FRITTATA SANDWICH

1 10- to 12-inch round French bread or sheepherder's bread
3 tablespoons olive oil
1/2 pound spicy Italian turkey sausages, casings removed
1 onion, chopped
2 zucchini, trimmed, diced
1 green bell pepper, diced
1 large tomato, seeded, diced
3 garlic cloves, chopped
1/4 cup chopped fresh basil
10 large eggs
1/3 cup grated Parmesan cheese



Cut bread horizontally in half. Cut out soft insides, leaving 1/2-inch-thick shells. Brush inside of bread shells with 1 tablespoon olive oil.
Crumble sausage into large non-stick broilerproof skillet. Sauté over medium heat until brown, about 5 minutes. Transfer sausage to bowl. Add onion, zucchini, bell pepper, tomato and garlic to skillet and sauté until vegetables are tender and liquid evaporates, about 9 minutes. Mix in basil. Cool briefly.

Preheat broiler. Beat eggs in large bowl to blend. Season with salt and pepper. Mix in sausage, then vegetable mixture. Heat remaining 2 tablespoons oil in same skillet over medium heat. Pour in egg mixture. Cover and cook until almost set, occasionally lifting edges to allow uncooked eggs to flow underneath, about 7 minutes.

Sprinkle top of frittata with Parmesan. Broil until eggs are set in center and golden brown, about 3 minutes. Run spatula around edge of skillet to loosen frittata and slide into bottom shell of bread over, pressing to fit. Press top half of bread over. Cut into wedges and serve or wrap in foil and serve within 1 hour.

Turkey Sausage Lasagna
Makes 8 servings

Ingredients
1 pound Italian turkey sausage, casings removed
1 jar (25.5 ounces) light vegetable spaghetti sauce
2 cups no-fat cottage cheese
1 cup grated low-fat mozzarella cheese
1/4 cup plus 2 tablespoons grated Parmesan cheese, divided
Vegetable cooking spray
8 uncooked lasagna noodles





1. In large nonstick skillet, over medium-high heat, crumble sausage and sauté 9 minutes or until no longer pink. Drain. Stir in sauce.
2. In medium bowl combine cottage cheese, mozzarella and 1/4 cup Parmesan cheese.
3. In 13×9×2-inch baking pan sprayed with vegetable cooking spray, spread 1 cup meat sauce over bottom of pan. Place 4 uncooked noodles over sauce, breaking to fit if necessary. Spread 1/2 of cheese mixture over noodles. Layer with 1/2 of remaining sauce, 4 noodles and remaining cheese. Top with remaining sauce, covering all noodles. Sprinkle 2 tablespoons Parmesan cheese over top. Cover tightly with aluminum foil. Bake in a preheated oven at 350°F for 45 minutes or until noodles are tender. Let stand 10 to 15 minutes before cutting.

Make gravy, throw over mashed potatoes or fried and biscuits. Also you could make a meatloaf use cream of mushroom on top or cream of chicken soup on top instead of ketchup. Just get creative anything you do with sausage or a ground meat you can do with the ground turkey.
