Proteases break enzymes down into amino acids.

The answers you received earlier are all correct but let me make it much detailed.
When protein is ingested, nothing happens to it untill it reaches the stomach where it is acted upon by the enzyme pepsin and converted into polypeptides, proteoses etc.

From there it moves further into the duodenum where it is acted upon by the enzymes like trypsin, chymotrpysin and carboxypeptidases. The earlier products are brocken down into dipeptides.
Finally in the jejunum it is acted upon by the dipeptidase which convert dipeptides inti amino acids.

Proteins are digested to amino acids which are then absorbed. proteins are digested by enzymes called proteases.
dsaccharides are digested to monosaccharides and fats and oils to fatty acids and glycerol

I think that they make them more absorbable in the gut or intestine so that they can be transfered more easily into the bloodstream. That is a good thing!!!
