Depending on which subjects she took, she can work in many fields, that is what economics is know for.
A very stressful field is in market analsys. Here economists look at how various market conditions will affect stocks and trade.
Another one is industry analysis, which looks at the competitive forces and effinciency in certain industries.
Academia is also a nice choice, this is more of a laid back job not highly paying, but many academics consult outside of academia, and make extra money in this way.
Basically, Economics, is a good starting point to enter the market. Some of other careers are;
Investment Banking, Econometrician, Consulting, Trade Analysis, Research,.
I would advise using online recruitment sites, I am sure you will have luck.

apart from teaching she can also try economic research companies like TECS etc. She can try market research outfits like MARG, MODE etc. Banks also hire economics grads. Check out the RBI as well. let her also knock on the doors of the rating agencies they may need some assistance. lastly ask her to try the financial newspapers and magazines for a position.
