Are you sealing the wood before final treatment? (paint, stain etc) There are wood sealers that seal the wood so the grain does not stick out as much. It also allows the final coat to be more even. After staining, you can use a Polyurethane, shellac, varnish or an oil rubbed finish. Oil looks better, in my opinion, but needs to be maintained more.

You can buy a product called Knotting to stop any resin from the knots coming out.

varnish is a good bet . cheap and cheerful guid luck
