There were mentions somewhere on a scientific documentary (which I cannot recall now, it was many many years back), which says that the flesh of humans taste a little bit like a cross of monkeys and pigs. Though I have not tasted monkeys but I could guess why humans taste like pigs is due to the nature of the human activity and closeness of the genes (have you heard of organ transplant from pigs to human?)

probably very bony, with a lot of fat.
I wouldn't expect it to taste very good -- especially if its a human from urban areas where processed/contaminated food has been part of that persons diet for most of his/her life.
Lions, for example, are not crazy about human flesh, but often resort to it when they become too old to chase down swift athletic prey.

You'll just have to see or read that book, Survival.
(The plane crash with the Rugby team. True story. They had to eat some of the dead to survive.)
According to the show and book," It was blah tasting, but then again they tried not to think of anything but survival.
