because everything has a gravitational pull and everything also rotates on its axes so the sintrifical force spreads it outwards on its equator

Spinning matter from the center of the galaxies create the spiral form as matter is thrown from the center. Galaxies are still spinning, we just can't see it since it's very slow.

Because the rotation speed in its center is not the same as that in the exterior, there is a velocity gradient from the center to the extreme, they are not rigid solids. There are a lot which are elipses.
