Emeril's South Beach: http://www.emerils.com/restaurants/miamibeach_emerils/

Not only is the food incredible, but Emeril's staff (in all his properties) are trained to the max on how to provide perfect service, with the best balance between just the right amount of attention and not being at all annoying :)

The waitstaff is intimately familiar with each dish and the sommelier is a genius, having selected a wide variety of choices in each price point... wine stewards so well schooled in pairing your particular favorites in wine with the nuance of Emeril's dishes... and they can stay easily within your price point and suggest to you the perfect pairings by the glass or bottle. They are not at all snobbish... which in a restaurant of this caliber, is rare.

The atmosphere is perfect for me too... a huge wine storage display is central to the main dining area, tables not too close together, not too quiet, not too loud, you can easily have conversation without being overheard by other diners, but there's still an intimate feel somehow.

Your server is never too far away and generally anticipates your needs just about the same time you do :)

I won't even go into the perfection of the dishes because Emeril's reputation is just really clear... he throws stuff together on his television shows in a short period of time, but he only got this popular by being a relative culinary genius. The chefs at each of his properties are just extraordinary with incredible attention to detail and the taste factor is 10+

Another added bonus is that if you want, after dinner, since you're RIGHT there on the beach, a beautiful walk on the beach or along the drive is just perfect... exciting nightlife on the drive... and peaceful oceanic beauty on the beach side of the restaurant.

I don't even have another suggestion to compare :)
