Many animals do this because the air offers less resistance for them than the water. This means that they can move through it with more ease and therefore speed.
The energy required for jumping out of the water is actually less than the energy saved by moving through the air instead of water.

Dolphins must come up to the surface on a regular basis to breathe, they're not fish, they're mammals. While I'm sure in some places watching dolphins jump out of the water is a common sight, in shallower habitat (Like the Indian River Lagoon, which is home to about 300 dolphin, not counting the ones that just pass through) you don't see those big jumps as often as in deeper water.

Dophins are highly intelligent and love to play though, and they do whatever they want, even if it's jumping out of the water.

They jump out of the water to catch their breath. They use lungs too you know.
