I'd say happy smells like the colour orange, but not the fruit.
It actually depends on the sort of happiness, too. For example, the smell of warm bread fresh out of the oven --that's a happy (coming home, comfy sort happy).
Then there is a happy that smells like spring flowers and a fresh breeze -- that's the refreshing, hopeful sort of happy.
There is also a happy that smells like the sea, it smells of salt and fish and moss--that's the free-spirited, independent sort of happy.
There are many more, but these are the first things that come to my mind, and I wouldn't want to confuse you any more because it is an extremely relative thing: It depends on your perception of happiness and the connotations you have with certain smells.

Smell of cooking for the hungry or a thundershower in the midst of scorching summer day. The moment you pick any smell for happiness, happiness changes to joy or pleasure because smell is a sensual experience whereas happiness is a psychological feeling.

happiness smells like warm bread when your in love, cotton candy and wild onions when you remember being a kid. Happiness sometimes smells like whatever perfume your mother used to wear. Happiness smells like the best memory you can think of. Everything is connected to a smell.

Marshmellows roasting over a fire. Freshly washed clothes that have dried in the sun, hot bread coming out of an oven, cotton candy, sun tanning lotion and ocean surf, a baby's skin, spring flowers, my dog's paws, the smell of hay on a hot summer day...

Happy smells like fresh flowers, the rain in summer when it first hits the ground, it smells like cookies baking in the oven, like food is cooking on a holiday.

Happy has no aroma. But it is an emotion. For a poem you can describe happiness as the aroma of flowers, your favorite perfume, etc..

For me, it would smell like a warm sunny spring time afternoon in the carolinas. I say this as Spring and Summer are my favorite time of the year.
