No tofu.... That can make them sick. Your beardie can also eat apple pieces (make sure they are small enough to fit between his eyes) zucchini, squash, banana's, blueberry's, strawberry's, in the summer get him some dandelions. They LOVE the flowers and can eat the green part also (but after eating the flowers, mine don't...lol. He LOVES the flowers though!)
Now, two male bearded's WILL fight to the death once they are adults... as juveniles that might be OK.. but they will fight and constantly stress each other out. Male/Female together will be OK, but yes, they will want to mate all the time.. But PLEASE if you do that, read about how to take care of their clutches (babies) because you WILL have some.. and they are not easy to care for.
Now, we use tile for the terrarium because my husband belongs to a bearded dragons forum, and he found out that they very easily get impacted. The pet stores will tell you differently because they want to sell there product.. my husband has actually seen autopsy pic's of a beardie that died from substrate impaction, and it was really sad! We have ours in a 55 gallon tank... with a stand under (we got the kind that came like this) and the lights just set up on top. You can have just an aquarium on a table or something like that however. We have a large water bowl in ours because they also like to sit in it... And you should be putting him in the tub (just over luke warm) for awhile every two weeks or so. (that will also help if he seems to get impacted)

my friend, you can feed pinkies. just bto adults though because they are too big for juveniles. no impaction because why would it cause it? they can digest meaty items and they can digest the shell of bugs so why wouldnt they be able to eat mice? i would STRONGLY disagree with feeding anything over a fuzzy. if you choose to do so anyways use prekilled because adult mice can bite chunks out of your lizard that will most likely get infected. also, i feed my dragon hard boiled eggs but only the whites because the yellow has lots of cholesteral. feed eggs and pinkies SPARINGLY. high in fat

I have a bearded dragon, I feed mine crickets,meal worms & all sorts of fruits & veggies, nothing acidic. You could try tofu, but they can be VERY picky and he might just refuse, same with the salad, to make sure they get everything they need you can dust the crickets with Powdered Vitamin Supplement, They need alot of Calcium and Vitamin D is very important. I have mine in a 75 gallon (wide) glass tank, I use calcium sand, because if they eat it, it's good for them and won't hurt them. Mine would never be happy with another dragon in his cage and yes, if you have a male & female they will mate and then you have to have a whole cage set up just right for the female or she will get egg bound and die. I have a huge water bowl in the cage, he loves to sit and lounge in it all day, and it's for drinking too, they do need drinking water, plus I also mist him a few times a day. This is from having a Bearded Dragon, he's 5 now and my Vet says he's the most healthy Beardie he's ever seen. Plus make sure you have a basking light on him, they love to bask under basking lights!

I have 3 beardies 2 males one female they never fought like hurt each other by biting or ripping flesh. it consisted of head butting and postering alot of head bobbing some arm waving and head floating. thats the name I call it when it looks like they are head bobbing backwards in slow motion. they bring their head down very slow and then back up just a little faster usually followed by an arm wave or two or 10. very facinating. I feed mine pinkies or fuzzies about every week I have never had a problem. I normally do not feed them adult mice though just because they fight back and I don't want any damage to my beardies. when beardies are young they do not seem to want to eat alot of greens they do love fruit so I buy baby food fruit and chop my greens up very fine and mix them in they don't even skip a beat eating the fruit. also I finely chop up the veggies and put the meal worms in with it and when they eat the mealworms they cannot help but to get veggies. Mine have access to a swimming hole about 3 inches deep they all bathe in it then bask right after. they also have access to a water bowel but rarely use it unless a cricket gets stranded in it then it's easy prey. yes the dominant male wants to mate alot so that may not be what you want. like the previous answer said google bearded dragon care sheet and you will have a weeks worth of reading. I use gravel for substrate it is a larger than say aquarium gravel and easy to spit out for the dragons. also easy to clean. good luck they are the best dragon/lizard to have in my oppinion. good choice!
