If you mean mathematical models, it is usually because we can't work on the real thing easily. Like light. Is it a wave or is a photon. Each is a mathematically supportable model that works just fine, so take your choice. Is matter made of atoms, or waves, or strings (Hawkings). Depends on what you need to do with the thing mathematically. I, personally, prefer to think that beautiful blond waiting for the bus is an attractive collection of atoms. Hard to conceive of her as a bunch of waves or strings.

Modeling is a proven and well-accepted engineering technique. We build architectural models of houses and high rises to help their users visualize the final product. We may even build mathematical models to analyze the effects of winds or earthquakes on our buildings.
