Music keeps randomly dissapearing and deleting itself from my ipod video. WTF?

Every time I seem to tamper with the synch's of the other parts of the ipod (like the video, or the photos) large quantities of my music gets wiped out. This last time, ALL of my music got wiped out. Music I had collected from several different computers in several different places. WHAT GIVES?? I've never unplugged it without undocking it. This music is set to manual synch always, so how can music keep vanishing? It's becomming a serious pain in the ***.
