On various networks (MTV) in particular, they have backing songs without vocals, just the music in their TV shows. How do they do it?

It's called an "Instumental" that's the version of a song without the words. Most songs have these versions.

There is a professional recording device that divides the songs into different parts (i.e. vocals & background), and they can mute one part while playing another.
