I am mainly want to know how much sponsors (padrinos or madrinas) are needed and what do they provide you with.

they can go from several to just one it depends on the size of the party you want to make and how close are you to them like if you have a deep relationship they are usually the ones that are chosen to be sponsors. the can provide you with cider,champagne and other stuff like decorations,cakes even dresses if they want to.
