The first dates should be mixed...fun and lots of activities and quiet ones with conversation; as the relationship matures you need time for conversation more I think.

Neither.
A date is supposed to be leading to intimacy, so the talking should end sooner or later, hopefully sooner than later.
And, if I see friend on a date, it is no longer a date it is a gathering and that means somebody is afraid of getting intimate.
Sooner or later the pretenses have to be dropped. You don't date to become friends. You date to become lovers.
And while I am all for courtships, those have nothing to do with dating. Those are meeting, gatherings, and get togethers. People who court don't have dates. Dates are against the rules or courtship.
There is more than one way to become a couple.
You have to choose which route you wish to travel down to reach your final destination.

If you don't know the person all that well a buffer of activities is a good idea. Its a good ice breaker to have a laugh and a good time instead of the awkwardness and pressure of first date conversation.

Fun dates with lots to do... If you turn out not to be a match with your date, then a quiet one would leave you bored and uncomfortable!

I like there to be a little back and forth conversing. So, I guess like a slightly quiet date.

Quiet one on one dates. Loud parties create a buffer zone between me and my date. Sometimes that is not all bad, come to think of it.
