I know that it has to do with the dead crab emitting a toxin, but can someone explain this in a more scientific way for me?

Not only do the other crabs eat the dead ones and it can spread disease, but also the company that buys the crab do not accept dead crabs. Also it creates a little more room in the holding tanks

the live crabs start eating the infected dead crabs and then it just keeps spreading

They don't take dead crabs, no one would buy them.
