and you had just left a meeting with other vampires on the best way to take out your enemies and you heard something in the bushes that you KNEW was a vampire assassin and would try to kill you, what would you do?

Scream like a girl and run away. The assassin would think that you're not a mighty vampire. Duh.

It is very difficult to project the outcome of any battle given the great variety of blood Disciplines available to the vampire Clans, or bloodlines. But I can tell you my battle strategy: first, being a member of Clan Gangrel, I would activate Gleam of the Red Eyes, enabling me to see in the dark, Wolves' Claws, enabling me to cause aggravated damage not easily healed, and the highest levels of Potence (superstrength) and Celerity (superspeed) I've learned, and lastly I would use my Discipline of Protean to change shape into a werewolf-like form that is a cross between man and wolf, standing on its hindlegs and towering over nine feet tall. Anything that came out of that bush would be shredded if it did not have a level of power equal to my own. I wear a steel breastplate at all times, specifically designed to expand as my form shifts in order to deflect wooden stakes, and if any attack got thru that could cause me lethal damage my Discipline of Fortitude would either soak it or avoid it altogether with the power of Aegis - which can even resist sunlight and fire for short periods, and with my level of Fortitude the only damage that can hurt me has to be aggravated - normal attacks and weapons, including bullets, do me no real damage whatsoever. Even beheading or dismembering me does not work, as Aegis keeps me in existence long enough for all my body to transmute to Mist using the Protean power of Mist Form (and I might transform anyway, leading my foe to think I had been destroyed by a lesser attack such as a hail of bullets or an explosive device like a grenade) and then re-form somewhere else, preferably behind my opponent, and become the vampiric equivalent of a Quisanart, attacking five or six times to his one by using my Celerity. Eventually I would cause enough aggravated damage to force my foe into torpor - the vampiric healing coma. When he drops I would stake him and leave his sorry butt tied out for the sun.
