The sun does not make the sky blue. The sky is blue because of the reflection of the water on earth. Should the sun go out the sky would appear black.

Black, because there would be no light. The sky is blue because the atmosphere refracts sunlight, and that is the color that is bent towards the ground. As the sun goes down the angle changes and we see different colors.

if the sun didn't make the sky blue we'd all be dead because there would be no sun to heat the planet or give energy, so I guess it wouldn't matter what color it was

It would be black. Black at day because of no sun, black at night because the moon doesn't reflect any sunlight. Apart from the relatively feeble light of stars, that is.
If we had lots of electric light here on earth though (supposing we somehow survived) clouds would be slightly illuminated. Of course, clouds would not form anyway because of the lack of heat from the light of the sun.

Black, and if the sun was gone there would be no energy. No energy means no life. And that would not be good. Also the earth would not be revolving around anything so we probably would be colliding with many other celestial objects.
