OK, here's the process. It's not too hard to do, except the last step:
1. The first step is to decide how many miles you want to show on the bike. Let's say you want to take it down to 500 miles.
2. Now figure out exactly WHEN the bike's odometer hit 500 miles, and exactly WHERE the bike was at that time.
3. Next step, throw the bike into a way-back machine and set the controls for the exact time when the bike had 500 miles on it.
4. Hit the start button on the way-back machine, but don't try to go along WITH the bike yourself. That could get very, very messy.
5. Go to where you know the bike was/will be.
6. Get on the bike; ride off into the sunset and knowingly sell it for more than it's worth.
7. Live with yourself.

you got to know what your doing otherwise you will mess it up. I would go around asking young guys who work on bikes and offer to pay them under the table. Otherwise you will have to tinker with it. If it is all electronic find a hacker but finding one is like trying to find Bush on Katrina......
