there has been some studies on it. I watched a video in a psych class that had some scientists questioning a lady believed to have multiple personality disorder... The best way they got to talk to her different personalities was through direct questioning. My brother, who has it (and whom I don't try to bring out his different personalities), usually experiences it when his external environment is too difficult for him to deal with or is better dealt with by his alternate personality. Its mainly stressed induced.

I've worked with someone with multiple personalities. She would switch under stress: if I brought up an uncomfortable topic for instance or stayed on it longer than the personality wanted.
I had times where I tried to make them switch. Play therapy was great to induce a switch - having the person play with Beanie babies I brought. I found play brought out a younger personality.
Sometimes I could simply ask for a personality and some of the time that personality would come out. Some of the personalities were similar and I did not notice the change. I learned to ask with some frequency who I was talking to and often would find there had been a switch.
As others stated in their answers, often times different functions - balancing a checkbook for instance- were done primarily by one personality. There is often one dominant personality and some personalities were very aware of the others while others were totally unaware. Weird, huh??

Triggers mostly. When faced with a situation that the person cannot handle then someone else (ANOTHER PERSONALITY) takes over for them. This is a different aspect of their own personality that they formed in childhood to handle the situation for themselves. Most are victims of childhood abuse be it physical or sexual or both.A child may have been verbally abused and told they were stupid when bringing home a bad grade lets say in Math. They may invent another person to do the Math for them. This happens in the most severe situations.

People often 'switch' into another personality to avoid a possible harmful or distressing situation, with the reaction most probably stemming a surpressed memory, usually acquired in childhood

I changes partly because of peer pressure, changes in life, and loss of loved ones.
