SATA stands for Serial Advanced Technology Attachment. It's a type of drive connection.
The SATA controller is used to interface between the SATA drives and your OS. The most common types of drives it is used on are hard drives and CD/DVD drives.

Talking to SATA disks. SATA = serial ATA = a serial version of how disks used to connect (was called IDE, then ATA, now PATA ... basically a parrallel connection bus).

SATA uses very high speed serial connections, so it's as fast / faster than IDE and uses many fewer wires in the ribbon cable... so the wires are smaller and make less of a mess in the case.
