Seriously, most songs are old and very well known by regular fans ...so when a few people start singing a particular song, everyone around them quickly joins in. Thats all.

Well some people just start singing and it just catches on to the rest of the crowd. I know at basketball games the have the graphics on the little screen going around the ceiling. Maybe sometimes they play the track and everyone sings along! Go to a game and see what happens.
