Whose creation theories are you asking about?

Creation stage takes one day in the Bible, but since God is infinite and infinitely powerful, that's really not an issue, is it?

Moreover, we couldn't really be certain that what we see in space isn't some elaborate CGI and that there really are other stars, etc. in that situation.

Per the big bang theories, as they now stand, in the first second or so after the BB, there was an inflationary epoch during which the universe expanded faster than the speed of light.

Two things of note here: first, it was the universe itself that expanded that fast, not the mass/energy contents within the universe; second, inertial mass, which is limited by the speed of light, did not evolve until some time after the inflationary epoch was over several seconds later. [See source.]

PS: According to the Torah and Old Testament (Genesis), creation took six days, not one day. Although the periods (days) are inconsistent with the BB theory (billions of years), the sequence of events in Genesis is not inconsistent with the BB theory. That is to say, creation of the universe came first in both and creation of mankind came last in both, for example. The sequences of major events in between is consistent as well.

The first 'mass structures' in the universe were simple atoms which were formed out of the energy of the Big Bang. No mass can 'form' faster than the speed of light, nor can any mass move faster than the speed of light.

If an inflationary era existed when the universe began and it expanded faster than the speed of light, what would stop it from expanding to infinity in no time.
The inflationary universe does not make sense.
The speed of light was established at the beginning, before anything else.
The first space-time pulse could not be shorter or it would not exist.
The speed of light is an incident that takes time.
To speed it up it would be necessary to reduce the length of that original time pulse, which can't be done,it would go out of existence.
The universe does very well without Guth's inflationary era..
