I know it is Ultimate Fighting Challange. I meant was what type of fighting.

it is what is called mixed martial arts. Basically there are few restrictions. You can't do things like eye gouging and groin kicks. Beyond that, it is pretty much open. Brazillian Ju Jitsu is a popular Martial art for UFC because it uses a lot of grappling techniques and great for defense. The reigning heavyweight champion, Tim "The Maineiac" Silvia is primarily a punch who has some submission abilities.
UFC is what WWE would be if it didn't have the trash talk and was real. Ken Shamrock was one of the best in UFC before he got old.
