More than likely it's a bad temp sending unit.

The only thing that would do that is if you have a stuck thermostat. It is not letting the water circulate right. Then your radiator water is not too hot as it is not circulation.
Anyway, check the radiator. Take the cap off and with the engine running you should notice the water circulating when the engine gets hot , as the thermostat opens. If not you might need another water temperature sensor. If you have a radiator fan make sure it is working as this may cause it to overheat.
Also buy a Haynes Repair Manual for your car and vehicle.

next time you start the engine, while it's ideling, slowly remove your radaiter cap, and see if coolent comes out under pressureIf yes, blown head gasket. If no, have thermostate temp sensor tested

start it then check under the hood to see if the fan is running(ours was unplugged)...check coolant level too
