In order to be a Pilot in any of the armed forces you have to be an officer and in order to be an officer you have to at least have a bachelor's degree so I was wondering 1. if I have my facts straight and 2. which is the fastest/easiest/quickest?

What will be easiest for you is based on your aptitude for and interest level in a particular course of study. So no one can really answer that but you.

And I do not know of any bachelor's degrees that can be completed in less than four years. That's why they call it a "four-year degree." You might be able to trim, like, a semester off but that's only providing you haul a$$ all through your college career and take extra heavy courseloads. And THAT, friend, would certainly not be easy.

Sorry, don't mean to dampen your plans but I think you are being unrealistic.

I would hate to put down a particular major because there are always people that are genuinely interested but think about the majors of Division 1 student athletes. I am talking about the ones that have a good shot at being pros and they will be rich regardless of what they study. I believe the most common major for those with demanding schedule outside of classroom is communications. By the way, I do not think economics is the easiest. Business or marketing is probably easier than economics in my opinion. Then again, there are highly motivated individuals in those majors who will become successful.

If you want to be an officer and pilot in 4 years,

you want to find a school with a College of Technology and Aviation

go for a Bachelor's of Aviation

Kansas State

The University of Illinois Institute of Aviation

and I'm sure a list of others.
