Most cats doen't acually like the taste of mice, they are just small enough for a cat to catch. Many house cats birng the mice in and do things like laying them in front of the food bin (trade?)

it would make the cat owner sick and they wouldnt buy it.
and really cats only eat mice because they happen to be small, easy to catch, and common. cats thatl ive on farms eat mroe birds than mice because theres more birds available.
