Does

Mistakes don't define who you are; it's how you deal with mistakes.

Well, it makes sense, but it has room for improvement.
Try:
"We are not defined by the mistakes we make; instead we are defined by how we choose to deal with mistakes when they happen."
If you're wondering what the sentance is supposed to mean, as opposed to how it could be worded differently, I believe what it is trying to say is that, making mistakes doesn't define us, it is our reaction to the mistake that tells who we really are. Someone who makes a mistake and walks away is very different from someone who sticks around and tries to fix it. Someone who fixes it by being proactive is very different from someone who sits around worring about what has happened and yet does nothing.
I don't know if the second part was what you were looking for, but I wanted to cover all my bases. I hope this helps.

It is said, "We err to learn". We are humans, Humans are fallible, and therefore we all make mistakes.

In view of the above, our mistakes do not define what we are, but the manner in which we deal with our mistakes. Some get angry and may go on a rampage like a child. Some are cool; they chill out and calmly resolve the problem. Others get frustrated and end up achieving nothing.

In a nutshell, it is the manner in which we deal with our problems is what defines what we will be.

Yes.

Whether it be mistakes you made or mistakes inflicted upon you by others, how you react towards those mistakes is what shapes your life and identity.

For example, I had a friend who dated a guy that was abusive. They broke up.
She could have:
1) Blamed herself for the whole thing, try to patch things up and become dependent on the person
2) Feel worthless and undesirable and get depressed or search for someone else to make her feel special
3) Attempt to hide and numb the pain, vow never to trust men and become feminist or maybe even lesbian
4) Realize that she is worth something, the guy was being a jerk and demand respect from her next boyfriend.

Those are just a few of different responses to the same "mistake". Each brings forth a different identity.
(Btw, she chose 4)

It makes a lot of sense. Everyone makes mistakes at some point in their lives, you can't judge anyone by their mistakes. However, some mistakes are greater than others and are harder to set right. Only people with a strong character can deal with such mistakes.

Yes, I do agree with you. People are not perfect. We all make mistakes. If you deal with it in a manner to correct it intelligently, then you are defined as an intelligent person. If you deal with it, and go into a tantrum, you are defined as immature.

it does.
It says that everybody makes mistakes but how you deal with your mistakes is going to define who you are.

I think it almost makes sense but if you split it into two sentances it would sound better

eg.
Mistakes don’t define who you are.How you deal with those mistakes defines who you are.

It makes sense but maybe replacing the word define with dictate would be more of an expression.
