My wife is very interested in language, the way it evolves, and the history/theory behind it. She started a university course in Speech Pathology and enjoyed the language related units but quit the course due to the medical side of it. Are there any careers/jobs out there for someone who studies language etc??

2.Linguist for corporations-large companies need to localize their products and services to suit their different geographical markets.

3.An official for International organizations; for example the WHO official languages are English, French, Spanish, Arabic, Chinese, and Russian, so employment for a linguist might be widely available depending on the job location and your wife's fluency in which of these languages

4.Interpretor in court, community ,conference etc..

5. Accent coach maybe, for actors or for immigrants who want to avoid discrimination from job or other opportunities bcoz their accent gave away race and country of origins.It's crazy but maybe there's someone out there who needs the service?

6.A language teacher?

7. Editor/proofreader for Press Agencies; eg for translated texts.

8. Film industry need voice overs, subtitlers to reach a broader audience

translator?
being language translator is not the same as other people. once you studied and can able to translate words, you can be a highly paid profession on your own. dont have to work in an office for 8 hours, overtime etc. It will be your talent and full or part time job.

Linguistics. Most likely at a University. "Professor of Linguistics." Sounds nice. And I know that high-tech companies look to hire linguists for big bucks. You can check the link below, though, for a list of companies who hire linguists..as an example of what career path she can take.

Language just by itself is very limiting. It’s like a math degree, it’s worthless unless you couple it with something else.

If she can do business language or technical language then she could probably find a place with research or something. If she is doing more then one language then she could do translating or even better technical or business/legal translating.
