If your standing on the ground, pick up a small rock or some dirt and then let it fall out of your hand.
When it falls you know that direction is down.
So the other way is up.

If your underwater. And dont know which way is up,
Blow out a bubble. watch it rise to the top, This will give you the direction of Up. so follow it up.

Where my head points when I'm standing. And for everything else the same holds. Actually, I find the best way to look at any idea is to turn it upside down. Painters often do that in order to see what they are looking at, without assumptions and pre-conceptions getting in the way. It works very well!

Both are abritrary relative concepts with no intrinsic value or meaning.
