Why is it that cookies you buy fresh which are soft and moist, like oatmeal or chocolate chip go hard when they go stale, but cookies which are supposed to be hard and crunchy like cinnamon snaps or nilla waffers go soft when they go stale?

It actually takes an average and adjusts to the moisture in the air.

Moist cookies start out moist and dry out to be equal to the humidity in the environment and dry cookies soak up the humidity.

dont know about that but maybe the answer is the same about hot products turns cold and cold products turns warm
