I have a broken fibula and have been wearing one of those 'boots' rather than a cast. I went and saw the doctor today and told me it is healing fine and that I will begin physical therapy next week and be doing range of motion exercises.

My question is.. would it be okay if I took off the boot when I sleep? I am very still when I sleep and couldn't imagine injuring myself further.

I know I should have asked the doc when I was in there.. but it has been healing for 21 days now..

Keep the boot on. It doesn't matter how still you think you are, you still move.
Don't take a step backward in your recovery. (pardon the pun...)

Do not remove the boot when you are sleeping. The bone may have started knitting itself back together but its still fragile. If you could take it off the doctor would have told you that. Try a side lying position with a pillow under the boot to take some of the pressure off. Hang in there. Once the bone is solid you won't have any more problems with it. If you do damage to it now it may not heel in a nice straight fashion. You could end up having to get it re-broken.

The fibula is a long bone-high up your leg it doesn't do much except for muscle attachments. Lower down your ankle however, it plays a significant role in keeping your ankle stable. Don't know where you fractured your fibula but I'd just keep the boot on and wait for the doctor's advise.
