Say one wanted to be a "rocket scientist" persay, what would one major in? physics? or is there a more concise major?

You could start by learning what propels existing rockets. How about going on the internet and typing in: the latest in rocket technology. I think the most important ingedient is; an intense fascination with rockets, and how thay work. If you're interested enough, you will find a way to become a scientist..So you must develop a curiosity. You will probably find that the more you learn about them, the more fascinating rockets and rocketry becomes. Then you can start experimenting with other propulsion driving forces, maybe coming up with a new approach. Math, physics and even chemistry are all involved.Try to develop as braoad a range as you can. There are ion propulsion driven crafts. there's talk of anti matter crafts, laser associated crafts(sail crafts powered by the sun), plasma engine crafts. Look up all those things, and study them. And you will find that you are already on your way to becoming a rocket scientist. The biggest step is just to start, so do it.
