If you try to sync an additional Wii-mote, the system thinks you are adding a third and fourth controller. So, the game is figuring out how to make the Wii disable (or remove) the default Wii-mote 1 (the one that comes WITH the system, pre-configured), and replace that with a new controller. Thanks.

Turn on the wii with the wiimote you wish to use as controller #1. That works for me. Then when you turn on the wiimote that came with the system it defaults to player 2 or 3. Whatever the case may be. If your packaged controller stops working all together then if you got 4 new controllers and synched them all and turned them all on with out the default controller being on it should recognize the 4 new ones no problem. I think once a wiimote is synched to a system it is synched until you synch it to another system.
