Adipose tissue is simply fat tissue. In the eye orbit it cushions the eye.

Adipose tissue everywhere has several functions:
1. store of energy
2. thermal insulation
3. protection
4. metabolism
Adipose tissue of the orbitals is no different. However, its protective role is most important there, providing a sort of cushion b/w the eyes and the bones of the orbits.

If I knew what adipose tissue was and where in the eye it was, i could probably attempt to answer this question. But, it's an interesting question, and I'd like to learn more. definitely one of the more intelligent questions.

It serves mainly as a cushion for the eye in case of a blow to the head. As fat is can also be used by the body in times of starvation, that's why people who are starving have such a sunken look to their eyes.
