I'm there for work - my time is limited to evenings after 6 pm, for one week. Any advice would be greatly appreciated.

http://www.woco.dk Wonderful Copenhagen official tourist site. If you've got weekends off, then get yerself to Rosenborg Castle (near Norreport Stn.), Ny Carlsberg Glyptotek (free on Sundays), the Carlsberg Brewery Tour (S train to Enghave; English tours on weekends), Bakken (similar to Tivoli, S train to Klampenborg), and the Danish Resistance Museum (S train to Osterport; walk towards harbor, Little Mermaid not far away), and take a canal tour (Netto boats from Nyhavn, 30 DKK). These are my favourites, and I've visited about 10 times.

http://www.aok.dk/section/english - chek it out!
I don't know how much you have seen so far, esp. since you can only check things out after 6 pm, but the list of interesting things is quite long
Amelienborg castle - queens residence
Rosenborg castle - royal jewelry collection
Ny Havn
National Musem
Glyptoteket
Art Museum
Gammel Strand - buildings fom 1500's
everything situated within a walking distance from each other
Transportation should not be a problem - the city has a very good network of buses, subways and trains - your hotel should have something called City Net Guide. Cabs can be expensive.

Restaurants :
I'd recommend SULT , situated in Danish film institute building, Cinemateket
Cafés:
My chioce would be Robert's café in the center of the city, probably has the best coffe selection in the city
Night life is pretty vibrant so take your pick ...

Let me know if you need more info.

Visit the Tivoli. If the weather permits, go eating outside at Nyhavn. Walk to the park with the mermaid. There are also a few museums worth visiting.

Basically all you're gonna get to see are bars, clubs, or Tivoli. Most stuff in Denmark closes by 6 or 7 p.m. because of work laws there. You may try Copenhagen's website. Just google it.
