I'm 20 and I have played 12 year olds 3 times in the last 2 years... Acting the age is more important than sounding like it. If you really get into the mindset of your character the voice should be able to come out naturally...

Also, higher pitches are good, and observing children will help.

I don't think you have to talk in a certain way if you are 11! You talk in a certain way due to your character! Whether you are smart,or stupid, have culture or not, like some things in life or not, walk in certain groups! There can be a child of 11 which is smarter then one of 16, so the ideea would be to choose your caharachters oppinions, hobbies, preferences, etc and act according to that and not speak in a certain way becouse you risk looking stupid! I just finished reading a play called "The awakening of spring" by Frank Wedekind in which most charachters are 14 but their experiences and theyr way of taking life is much more mature than mine, and I am almost 21!

remember what you were like when you were 11. What kind of things you were into, how did you talk. Just imagine yourself that age. Act like your character would act.

well, you could spend a lot of time around them (if your friends have little brothers and sisters)

listen to the kinds of words they use, look at the body language, how they say things(inflections) what they do when they are excited(or however you have to act)
