I'm holding an open house for a start-up company that helps executives build confidence. How much information should I display? (brochures, promotional products, etc)This would be held at a hotel ballroom and/or reception area(s) in the Metro Dallas area.

I think with this kind of business people will want:

1) To know what the service entails
2) How to contact the company
3) What services are offered.

Have several people from the company there to answer questions and give a demo.

Give out good quality brochures. Not sure about promo items - will an executive who lacks confidence want to advertise that?

As long as your display says it all, I wouldn't give out too much information unless they express an interest in pursuing it further. Brochures and promo products are very expensive so you only hand those out to the ones who are willing to give you their information, phone number, etc.
