I am 27 years old and so far I have torn both acl's in my knee's and dislocated both of my shoulders. Since I have participated in sports I have had injuries but never a broken bone. I have had both knees operated on with moderate sucess. I'm now not as active in fear I will tear or dislocate some other part of my body.

If you had ny nutrition deficiency caused tearing of ligaments, then all joints of your body would be so, so weak and your flesh would not bounce back fast. (Collagen and other proteins) So, it's not likely you are lacking anything.
But watch out how you use your body when you are not thinking - maybe you are exeerting excess power in wrong direction, like when you throw a ball? I recommend you to sign up a yoga class to make the joints flexible, increase circulation in the joint. Then gradually start sports again.
