Since you are asking your question in the general pets category I will assume that you are talking about pet rats.

If are referring to wild rats the answer is yes. Wild Rats are omnivores and opportunists and it would be stupid of them to give up any food source that they find on their forays (food searches). Their survival depends on them not being picky eaters.

Over a hundred years of domestication has made the pet rat a more selective eater and, no, as a rule, our pets are not that crazy about cheese as some are led to believe.

Some pet rats will eat cheese but it must be given sparingly, as a treat. Give hard cheeses, as cream cheese is a choking hazard, right up there with peanut butter. Cheese is high in calories which can cause obesity. It's very constipating for the digestive system, and because rats can be lactose intolerant....it can give them gas.

The commercial "cheese" treats that you can get from the pet store for rodents are merely cheese flavored, or cheese-odor enhanced:

A lot of the products that we buy for our pets are meant to appeal to the pet owner, not the pet itself. I've tasted those cheese treats myself and there is no cheese flavor about them. They just taste like bread.

FYI: Old and sick rats who are not lactose intolerant will accept cottage cheese as a nutritional soft food.

rats will eat cheese in the wild but do not give them cheese as it is hard to digest and can block them up which will cause bloat. a bloated rat is not a good thing if you want to treat your rat use the commercial food but add to it things like cat/dog biscuits, sunflower seeds, wild bird seeds, breakfast cereal ( not sugar laddened types ) try some pieces of apple, nectarines and other hard fruits which will help with there teeth but no citrus. blend the commercial food and your additives together well and you should have a happy rat

Rats shouldn't have cheese it is hard to digest. Only give your rat proper rat food, leafy veggies (excluding lettuce) and the odd piece of fruit for a treat.
