How come someone who excels at quizes is called quizical
then what woud you name someone good at tests?

Your question is not a good one. By the same analogy, a person who drives a race car should be called a 'racecarist', not a racist.

Because it is a race car driver, pianist is more used in the fine arts, hence the -ist, racist has another meaning as well.

Because it's driver, and racist was taken. Professions that end in "ist" usually are more fine arts related. Such as artist and pianist, or saxophonist.(Or just about any other instrument).

Because piano ends with an O, and it probably derives from some other language that changes the last letters to IST.
